Doesn’t that look GOOD? With the first hints of Spring in the air, we’re ready to put away the slow cooker, pass on the heavy stews, and move on to figure-flattering healthy food. If you love Greek salad, then we think you’ll really enjoy this somewhat classic, somewhat inspired recipe for Greek Orzo Salad with Roasted Shrimp that we’re guest posting for our friend and Featured Chef Rachel Gurk of Rachel Cooks!
Instead of using boring lettuce, we swap in orzo – the little rice-shaped grains of pasta that give this salad a bit more heartiness, making in perfect for a light dinner or a healthy lunch. And, we’ve also added in some small shrimp that have been quickly roasted in the oven until just pink for extra protein.
With all of the other traditional components of a classic Greek salad (plus a few unique additions of our own like fresh mint!), this salad is bursting with vibrant colors, flavors and textures that will brighten up your day and leave you feeling healthy, happy, and satisfied.
