Did you know that April is National Grilled Cheese Month?? For an entire month, we get to celebrate the nostalgic memories of what might just be the ultimate sandwich. Whether you’re into the Wonder Bread and Kraft American Singles version that many of us grew up with or the fancier sandwiches made with expensive cheeses and unique fillings, there’s something about a grilled cheese that reminds us of being a kid.
But, that doesn’t mean that the grown-ups can’t enjoy a grilled cheese! When our friend Carrie of Bakeaholic Mama, whose Caramel Apple Cheesecake we featured on one of our Sweet Tooth Friday editions, invited us to guest post, I knew that we had to put a “bakeaholic” spin on the traditional grilled cheese.
So, I took dessert to the stove top with a sweet grilled “cheese” made with fresh strawberries, mascarpone cheese, and buttery brioche bread. Instead of using fresh strawberries alone, it’s easy to make a quick compote with strawberries, sugar, and a splash of aged balsamic vinegar for something a little special. Schmear all of that in between two buttered slices of bread and that’s my kind of grilled cheese.
And did I mention we had the pleasure of meeting Carrie in person not that long ago? A few of us Boston-area Noshers met up with Carrie, Carolyn from All Day I Dream About Food, and Joanne from Fifteen Spatulas for a fun brunch. It was great to finally put faces to names in real life!
The beauty of this dessert grilled cheese is that it’s ultimately versatile. The compote can be made using your favorite kind of summer berry and if you can’t find brioche, use your favorite kind of sweet bread, like challah or even cinnamon raisin.
It’s that good and the perfect way to use up the abundance of strawberries that are everywhere.
