Acorda de Mariscos (Portuguese Bread & Seafood Soup)

Simple is better

Sometimes the simplest foods in life are the most delicious and this bread soup is proof. Throughout the Mediterranean and extending into Spain and Portugal, it’s very common to thicken and “beef up” soup with leftover bread for a hearty, filling, and satisfying meal. This Portuguese version slow simmers bread with onions, garlic, tomatoes, and spices until the soup becomes thick and velvety. At the end, fresh shrimp are added and cooked until perfectly tender. When it’s cold outside and you just don’t feel like heading to the store to buy groceries, this is a delicious, rustic weeknight meal you can make with things you already have in your pantry.
