Applesauce Cupcakes with Maple Brown Sugar Cloud Frosting

A one-bowl Fall cupcake with magic frosting

It’s time to put away the summer fruit and bust out the apples in all of our fall desserts. In these simple yet impressive cupcakes, Carrie mixes applesauce into the batter, not only giving the cake an apple flavor throughout but also keeping it moist while baking. And instead of using a traditional frosting, she tops these cupcakes with pillows of a maple brown sugar frosting. Unlike a whipped cream or buttercream frosting, this “cloud” frosting, also known as an Italian meringue is made by whipping egg whites to soft peaks with sugar then drizzling in a hot sugar liquid – in this case, maple syrup. The result is a fluffy, glossy, cloud-like frosting that pipes beautifully and doesn’t melt. Bake up a batch of these cupcakes with your kids for a fun weekend activity and see their eyes light up with the deceivingly simple (and delicious) masterpiece you’ve created.
