And what could be better than an Asian-inspired cold noodle salad filled with a colorful array of shredded raw vegetables, crispy baked tofu, and a sweet and tangy dressing. In this recipe, Sarah shares with us her technique for perfect baked tofu (using this trick) – crispy on the outside, soft on the inside, and glazed with an addictive marinade of honey, soy sauce, ginger and garlic. Asian egg noodles (or other noodles of your choice) are tossed while still warm with a tangy, salty, and sweet vinaigrette then topped with shredded cabbage, carrots, cucumber, and a handful of fresh cilantro. Pile the slaw high, garnish with crunchy chopped peanuts, and feast on the beauty you’ve just created.
