Emma’s broccoli and arugula pesto plays off of traditional basil pesto (made with garlic, olive oil, parmesan and pine nuts) with a vegan, gluten-free and Eastern-inspired sauce, dip or spread. She keeps the garlic, olive oil and pine nuts but instead of basil, she adds mint leaves, arugula, broccoli and – get this – miso paste. To keep her recipe vegan, she uses the natural saltiness of miso paste to mimic the nutty, savory component of the parmesan. As a result, her pesto is sweeter, a bit more complex, and utilizes three green ingredients: broccoli, arugula and mint. Each of these components hold very specific roles in the dish: the arugula adds spiciness, the broccoli adds texture and brightness, and the mint adds sweetness and complexity. The result is a healthy dip for veggies, a spread for the perfect turkey sandwich, and an easy sauce for pasta. Eating gluten free and vegan has never been this easy and tasted so good.
