This Caramel Apple Crisp Cheesecake is the best of both worlds – light, rich, and creamy cheesecake with a graham cracker crust on the bottom, traditional apple crumble with warm spices on top, and a big drizzle of caramel sauce to put it totally over the top…in the best of ways. And, it’s surprisingly easy to make! Unlike other layered desserts that require multiple cooking sessions, this is a bake-once recipe. The key is in letting it sit in the oven after baking and cooling it in the fridge to allow the entire thing to set. You’ll be able to cut perfect slices….that is, if you can hold yourself back from grabbing a fork and digging right in.
