We always hate having to choose between two desserts that we love, don’t you? Well, thanks to Carrie, now we don’t! This Caramel Apple Crisp Cheesecake is the best of both worlds – light, rich, and creamy cheesecake with a graham cracker crust on the bottom, traditional apple crumble with warm spices on top, and a big drizzle of caramel sauce to put it totally over the top…in the best of ways. And, it’s surprisingly easy to make! Unlike other layered desserts that require multiple cooking sessions, this is a bake-once recipe. The key is in letting it sit in the oven after baking and cooling it in the fridge to allow the entire thing to set. You’ll be able to cut perfect slices….that is, if you can hold yourself back from grabbing a fork and digging right in.

Graham cracker crusts are a delicious crumbly, nutty platter for pies and tarts. And, they’re so easy to make that there’s no reason to ever buy one pre-made or frozen. Although a food processor is the best way to ensure you have even crumbs, here’s the way to do it with no gadgets:
For 2 cups of crumbs, place 12 full-sized graham crackers into a large zip-top bag, remove the air, and smash with the back of a rolling pin. No rolling pan? Just use your fist!
The key is to make sure that all of your crumbs are approximately the same size so they hold together with the butter for an even crust. If you’re wondering, err on the side of finer crumbs since bigger pieces will fall apart when baked.
