Healthy fajitas for Taco Tuesday

If you love Tex-Mex food as much as we do, you know that it’s not always so friendly on the waistline. Today, we’re making Taco Tuesday a little healthier with this flavor-packed recipe for classic Chicken Fajitas. Instead of using a pre-made spice mix, Kelli blends her own with cumin, chili powder, cayenne, and more, perfecting a balance of smoky and spicy flavors. As she recommends, you can easily make a big batch of this homemade fajita seasoning and store it in the cupboard to use at a later time. The spice mix is dusted on top of lean strips of chicken breast and sautéed until tender then loaded into your choice of corn or flour tortillas with peppers, onions, and your favorite toppings.
