Crispy Skinned Barramundi with Citrus Fennel Salad

The colorful side of seafood

If there was such thing as sunshine on a plate, this dish would be it. Instead of masking the delicate flavor of barramundi with a heavy sauce, Emily lets the fish shine by simply seasoning it then searing it in a blazing hot pan until the skin crisps. Alongside, she serves a sweet, tart, and crunchy salad of salad of assorted citrus, thinly sliced radish, and shaved fennel. The mild anise flavor of the fennel, bite of the radish, and bursting tart-sweetness of blood oranges and grapefruit make this salad a refreshing accompaniment to the fish. Serve this dish on a big platter for an elegant dinner party with friends or individually plated for a light weeknight meal.
