Curried Quinoa and Asparagus Salad

The right way to clean out the fridge

On busy weeknights, we’re looking for convenient, easy, and healthful meals that help us use up everything we have in the fridge. Instead of relying on old stand-bys, take a cue from Emilie in this Curried Quinoa and Asparagus Salad which started out as a “clean out the fridge” project and ended up as something much more inspired! Fluffy quinoa serves as the base with tender asparagus, crunchy shredded carrots, and a can of chickpeas (one of our favorite pantry stables) adding veggies and protein. For a touch of sweetness, she adds dried cranberries and diced apple then tosses the entire thing with a simple vinaigrette flavored with savory curry powder. Since this salad doesn’t contain anything “delicate,” it’s perfect as a make-ahead meal or a dinner tonight / lunch tomorrow option.
