With Spring also comes the Jewish holiday of Passover, a week-long celebration that’s filled with symbolic meals and traditional foods including the oh-so-loved matzo ball soup! Even if you’re not Jewish, there’s no better time to cook up a batch of your own homemade matzo balls to nestle into a rich chicken soup. In the great debate of whether matzo balls should be chewy and dense (“sinkers”) or light and airy (“floaters”), we fall somewhere in the middle but towards the “floater” camp. In this recipe, Sue adds a handful of fresh dill to her matzo balls, which adds a subtle herbaceous note and beautiful speckled green color to the dumplings. The matzo balls are boiled in salted water then floated in a broth of chicken stock, carrots, celery, onions, and shredded chicken. Known as the “Jewish penicillin,” a bowl of this soup will cure all of your ills!
