If you’re on the Taco Tuesday bandwagon like us, mix things up this week by unwrapping your favorite fish taco from it’s shell. Lindsay transforms her fish tacos from something handheld into a fork-friendly “taco bowl” with healthy, satisfying, and filling layers. Nutty, whole grain brown rice serves as the base for this bowl and is topped with hearty, protein-packed black beans sautéed with corn. On top lies the true star – fresh cod (or tilapia or any other firm white fish) that’s rubbed with cumin, chili powder, and garlic then seared until perfectly flaky. As with any good taco, condiments are a must and Lindsay tops hers with chunks of fresh avocado, fresh cilantro and a healthy squeeze of lime juice. Serve these bowls completely composed or set out all of the individual parts and let your family make their own for a DIY taco (bowl) night.
