Scapes are the Medusa hair-like stems that coil out of garlic bulbs, straightening as they ripen. A fully straight scape symbolizes the garlic’s harvest time, but if you cut the scapes just after a coil or two has formed, you get these fresh, flavorful stalks that are mild enough to enjoy raw, and so versatile that they can be chopped into salads or sauces like this incredible pesto. Garlic scape pesto is thicker than traditional basil pesto, but packed with great flavor and nutrients, making it ideal to spread on a fresh mozzarella grilled cheese.
