Garlic Scape Pesto and Fresh Mozzarella Grilled Cheese

Saucy, Scape-y and Summer Fresh!

One of the highlights of summer is all the great produce at farmers markets, and one of our favorite farmers market treats has to be garlic scapes! Scapes are the Medusa hair-like stems that coil out of garlic bulbs, straightening as they ripen. A fully straight scape symbolizes the garlic’s harvest time, but if you cut the scapes just after a coil or two has formed, you get these fresh, flavorful stalks that are mild enough to enjoy raw, and so versatile that they can be  chopped into salads or sauces like this incredible pesto. Garlic scape pesto is thicker than traditional basil pesto, but packed with great flavor and nutrients, making it ideal to spread on a fresh mozzarella grilled cheese. Take advantage of your local farmers market where you can find everything you’ll need for this unbeatable summer treat! Get there quick, because the season for scapes is a very short one – they’re only available between late June and mid July.
