Gluten Free Irish Cream Chocolate Glazed Donuts

Festive glazed donuts worthy of St. Patrick

They may leave you feeling like you’ve found the pot of gold at the end of the rainbow, but there is no pot of oil involved in the making of these festive donuts. Baking rather than frying makes for a treat that is both less sinful and more simple, as you don’t have to keep an eye on each individual wheel of dough being dropped into the frying oil (nor do you have to worry about that painful and inevitable sizzling hot oil splatter). Whitney’s recipe is gluten-free and pays tribute to this celebration of Irish culture twofold, with Irish cream as a star component of a fairly simple batter and also whisked into a luscious chocolate-y glaze. Once you get your hands on a donut pan, it’s a matter of spooning your mixture into shape, allowing the donuts to bake and cool and then – the most satisfying part – dipping them into the glaze. Spike your coffee with some Bailey’s this St. Paddy’s day to take the ritual of “coffee and donuts” to a whole new level.
