So you thought hummus could only be used for dipping and snacking? If you think outside the box (or tub, should we say), like Dara did, a simple tub of hummus can be transformed into another delicious, healthy, and nutrition-packed recipe. While most “crusted” fish recipes call for a handful of breadcrumbs, Dara first spreads filets of omega-3-rich barramundi with hummus and fresh dill. Although she used a plain flavored hummus, you can easily change this recipe up by using your favorite flavor. Topped with just enough breadcrumbs to give the dish a crunchy crust. the dish is quickly baked in the oven then served. As the hummus caramelizes in the oven, it locks in the juices of the fish and creates a delicious, fresh crust. Serve this dish alongside couscous for a Mediterranean meal or even on top of a salad. Heck, we’d even wrap leftovers into a pita for lunch.
