Lentil and Potato Dal

Indian food is one of our favorite ethnic cuisines because it’s full of complex flavors and spices that tingles ever corner of our palates. Most people only enjoy Indian cuisine at restaurants (or the dreaded all-you-can-eat buffet) but this recipe proves that you can recreate the layers of flavor at home any night of the week (and for very little money!). Hearty, protein-rich lentils are simmered until tender with potatoes then mixed with a blend of savory spices for a creamy and satisfying vegetarian weeknight meal. Best of all, with the exception of the breads, Indian food is almost always naturally gluten-free. Serve with steamed basmati rice or scoop it up with your own homemade gluten-free naan.
