A healthier take on loaded baked potatoes

Are you one of those people who always chooses a baked potato as a side dish at a restaurant? Well, we love them too but often the sour cream, bacon, cheese, and butter loaded baked potatoes we crave can do a number on our waistlines. So today, we’re lightening up the calories and turning up the dial on both nutrition and flavor without losing one ounce of filling satisfaction. In this recipe, Min swaps out starchy regular potatoes for sweet potatoes, which are loaded with beta carotene, fiber, and Vitamins B6, C, and E. Instead of the usual unhealthy fillings, she creates a Southwestern-inspired mix of shredded chicken, black beans, corn, and quinoa spiced with cumin and lime. With just enough shredded cheese on top to make this a true baked potato, you can serve these loaded spuds as a healthy, satisfying, and filling meal all by themselves.
