Pan Roasted Cauliflower Steaks

Steak night, meet Meatless Monday

If you’re looking for a healthier, more affordable, vegetarian alternative to a traditional steak night, this recipe is just what you need! Instead of cutting cauliflower into florets, slice a whole head into thick slices that resemble “steaks.” Caramelizing the slices in a hot pan brings out the natural sweetness of the cauliflower and adds a nice smoky flavor. After a short trip in the oven to help cook the cauliflower all the way through, serve your steaks with a quick tomato sauce and bright relish made of sun-dried tomatoes, olives, and parsley. And since all of the ingredients are pretty inexpensive, you can literally serve a family of 4 for the same price as 1 steak! Clocking in at under 30 minutes to make, this quick, delicious, and satisfying dinner is just what you need to kick off a great week.

Yum! I love cauliflower, but never thought to caramelize it this way! The savory topping sounds good too!
