PB & J Sandwich Cookies with Strawberry Marshmallow Cream Cheese Filling

This counts as lunch, right?

Is there a more iconic food pairing than peanut butter and jelly? The perfect after-school snack, PB&J sandwiches rank high on our list of comfort foods. Cookies (any and all!) are also near the top of the list. Fulfilling dreams we didn’t even know we had, Kimberly combines these two favorites to make some showstopping sandwich cookies. Peanut butter cookies make up the “bread” of this “sandwich,” with a filling of  whipped cream cheese and marshmallow cream, flavored with strawberry jam. For light, fluffy peanut butter cookies, make sure to fully cream the butter and sugar, incorporating more air in the batter. Taking the extra 5 minutes to complete that step ensures your cookies won’t break apart before being loaded with delicious marshmallow filling. Customize your filling by using whatever jam you have in the fridge. For the PB&J purists, grape jam may be the only way to go, but also try strawberry, raspberry, or even more unusual flavors like currant or plum.
