Roasted Butternut Squash and Black Bean Enchiladas

Butternut squash gets all rolled up in these fall-inspired enchiladas

You guys loved our other enchilada recipe so much that we had to bring you another one, this time filled with seasonal veggies and perfect for your Meatless Monday dinner. One of the things we love about this recipe is the unique use of roasted butternut squash in the filling, making it slightly sweet and perfect for fall. Black beans make it healthy and filling while green salsa (creatively combined with greek yogurt for a homemade enchilada sauce) turns a typically spicy dish into a milder yet still delicious version that’s perfect for the kids. Top it all off with a generous sprinkle of shredded cheese and bake until golden and bubbly for a warming meatless meal your entire family will love.
