You guys loved our other enchilada recipe so much that we had to bring you another one, this time filled with seasonal veggies and perfect for your Meatless Monday dinner. One of the things we love about this recipe is the unique use of roasted butternut squash in the filling, making it slightly sweet and perfect for fall. Black beans make it healthy and filling while green salsa (creatively combined with greek yogurt for a homemade enchilada sauce) turns a typically spicy dish into a milder yet still delicious version that’s perfect for the kids. Top it all off with a generous sprinkle of shredded cheese and bake until golden and bubbly for a warming meatless meal your entire family will love.
“ I have always been passionate about cooking, but with a two and five year old helping, my cooking now has to be quick and easy. I love creating delicious healthy, mostly vegetarian, recipes, and I like them to look pretty too. ”
Marina is a former art teacher turned uber-talented recipe developer, photographer, and blogger behind Yummy Mummy Kitchen, where she shares her collection of quick and easy, healthful (and mostly vegetarian) family recipes. What’s a Yummy Mummy, you ask? In her own words, “a Yummy Mummy is a loving and dedicated mother who embodies a healthy lifestyle, while not losing a sense of the person she was before having kids.” And Marina’s style, both with her food and in her life, is just that – creative, stylish, and effortless. This is the kind of food you can feel good about serving your family while still having just enough panache to impress your guests. Oh, and did we mention she’s also a soon-to-be author??
