Spicy Tomato Barramundi Bisque

Tomato soup gets a facelift

This is what happens when tomato soup and grilled cheese grows up. On a night when you’re craving comfort food but don’t want to spend the timing making something that takes all day, Carolyn has created a healthy and spicy twist on traditional tomato soup. To make it even more hearty, she cooks pieces of barramundi in a broth laced with chili powder, white wine, and garlic, then serves it with her low-carb cheesy flat bread for dunking. The barramundi is hearty enough to stand up to the strong flavors in the soup without falling apart and a touch of cream at the end helps mellow the spices. On a cold night, or just after a long day, this is a grown-up version of classic comfort food.
