Our Top 5 Healthy Recipes of 2012

Happy New Year! As we ring in the new year, it’s fitting that January 1st falls on Healthy Tuesday as we recover from holiday eating and get ready to get ourselves back on track for a healthy and happy 2013. Today, we’re looking back on our top 5 most popular healthy recipes from 2012. Without further ado, here you go:

#5: Apple Chips: Looking for something a little healthier for snacktime? Meagan from A Zesty Bite bakes thin slices of apples at a low temperature to make them crispy then sprinkles them with homemade cinnamon sugar for a sweet treat you can feel good about.

#3: Vanilla Bean Brown Sugar Almond Butter: Nutty almond butter is a much healthier (and possibly even more delicious) alternative to peanut butter but store-bought jars can be so freaking expensive. Once you realize how easy it is to make your own with this recipe from Lauren of Healthy Food for Living, you’ll never  look back!

#2: Homemade Greek YogurtThick and creamy greek yogurt has been all the rage in 2012 but with that fame comes a hefty price tag. In 2013, make your own using this easy DIY trick from Sarah and Dulcie of Two Tarts.

And now for #1: Lighter Chicken Enchiladas: The oh-so-lovely Laurie of Simply Scratch fills whole wheat tortillas with a spicy chipotle chicken mixture and tops them off with just the right amount of cheese and a big dollop of fat free sour cream. Tex-Mex lovers, rejoice!

It couldn’t be easier! Literally toss it into a food processor and let it rip. You don’t think it’ll ever come together but after about 10 minutes, it does!
