THE RECIPE

Vegan BLT Salad with Heirloom Tomatoes and Coconut Bacon

From the diner to dinner

Before summer comes to an end and fresh produce is again hard to find, we needed to try out this vegan BLT salad, a fresh take on the otherwise not-so-good-for-you sandwich we love at diners. Kale takes the place of lettuce and is massaged into tender, dark-green leaves, offering more texture and flavor than wimpy strips of iceberg ever could. Next come the croutons, which are toasted until golden and crunchy. The dressing is lemon-tahini, with a surprising yet perfect ingredient–maple syrup. The syrup balances the bitterness of the kale and the brightness of the tomatoes. Not to be outdone, the tomatoes are the stars of the dish with bright colors and mouth-watering juiciness.

But Kate’s most creative ingredient in this salad is her Coconut Bacon. Made from coconut flakes, soy sauce, liquid smoke, and maple syrup, these savory bits are savory, smoky-sweet, and deceptively easy to make! There are still some days left before the first day of fall, so until then, we plan on holding tightly onto summer and throwing together this beautifully innovative salad.
