Lentil and Mushroom Meatballs

Spaghetti and meatballs, hold the meat

This isn’t any of that fake-meat nonsense. This is simply a creative use of the heartiest and most nutritious ingredients that the vegetarian world has to offer put together to create a perfect “meat”-ball with the texture and satisfaction of the real thing. Instead of using ground meat, Kate cleverly creates a meaty, hearty mixture of lentils and mushrooms along with oats and spices. Everything is quickly spun together in the food processor before being formed into balls. As they bake in the oven, the meatballs crisp up on the outside while the mushrooms keep them tender on the inside. Serve these smothered in your favorite red sauce as an appetizer, stuffed into a sandwich with melted cheese for a handheld lunch, or over spaghetti for a hearty pasta dinner. They’re so hearty and filling that even the pickiest carnivores in your house won’t miss a thing.
