A pie favorite turns into a cookie sandwich

If banana cream pie and banana pudding had a baby, this would be it. Thin homemade vanilla wafers sandwich a big dollop of freshly whipped banana cream for a nostalgic-tasting cookie sandwich. Since the cream is soft and fluffy, things get a little messy when eating these at room temperature but they’re equally delicious after a few hours in the freezer for a grab-and-go after dinner treat. The best part? No utensils required.
