Escape to Southeast Asia with this street food classic. Bun Cha, Vietnamese meatballs with a zesty, garlicky dipping sauce served over thin vermicelli noodles (aka rice noodles), is a lighter, Asian, gluten-free alternative to spaghetti and meatballs. Juicy and a little sweet, the meatballs in this dish are grilled as opposed to baked or sauteed, which add a surprising smokiness to the overall dish.  The brightness of the lemon and fresh herbs contrast with the savory richness of the pork, fish sauce and vermicelli for a heavenly and unbelievably summery bowl of noodles. Not to mention, this dish is easy and fun for a quick and flavorful midweek meal. With Asian street food this easy, there’s no reason you shouldn’t pig out.
