Classic Chicken Piccata

An Italian restaurant favorite made at home

Though the traditional version of this Italian (perhaps Italian-American is a better label) dish uses veal, chicken piccata has become a staple at Italian restaurants around the world and, after today, will be in your home as well. It’s the kind of dish that is quick enough for a weeknight meal but elegant enough for an entertaining occasion on the weekends.

Thinly pounded cutlets of chicken are lightly dusted with flour then pan-seared in a mixture of butter and olive oil, the former for flavor and the latter for temperature resistance, to create a light crust. After the chicken is removed, the signature sauce is created in the same pan with shallots, garlic, white wine, chicken broth, lemon juice, and capers. Nestled back into the sauce before serving, the chicken absorbs the flavors that surround it, keeping it moist and bright. While the flour on the outside of the chicken helps thicken the sauce just enough, you can also whisk in a little additional flour if you’d like. What you’re left with is a simple, classic, crowd-pleasing dish that is sure to stand at the core of your Italian cuisine repertoire.
