Grilled Peach Cocktail

Grill it then drink it

Peaches and other stone fruit are at their peak right now and perfect for eating out of the hand or raw in salads and other dishes. Grilling the peaches concentrates their sweetness by caramelizing the natural sugars and giving the fruit a bit of a smoky flavor. Along with the woodsy aroma of the thyme, a depth of flavor from the bitters, and a burst of brightness from the meyer lemon juice, this cocktail is the perfect sophisticated summer drink. And, it’s darn pretty as well.
