Mayo-less chicken salad for healthier lunching

Most chicken salad sandwiches are boring, flavorless, mayo-filled messes. Here, Chung-Ah re-invents this classic sandwich into something filled with delicious flavors and textures. But best of all, it’s actually incredibly healthy! How does she do it? Instead of using mayonnaise, she uses thick, tangy greek yogurt which gives us all of the creaminess and flavor needed to hold the salad together with hardly any of the guilt. Then, she adds a trio of fruit – tart dried cranberries, juicy grapes, and tangy green apples – along with red onions and crunchy almonds for a combination of textures that’s irresistible. Piled high on top of a sandwich, stuffed into a pita, or just mounded on top of a pile of greens, this chicken salad is anything but boring.

    This was the BEST chicken salad I’ve had in a long time, not to mention it was all healthy. Great recipe, I loved it!

    Great chicken salad but be careful with the 1/2 tsp of garlic powder, it’s overpowering. My next attempt I will try celery salt as an ingredient instead of the garlic powder because if you put garlic in the broth as you poach it’ll give you enough garlic flavor.
