Instead of using mayonnaise, she uses thick, tangy greek yogurt which gives us all of the creaminess and flavor needed to hold the salad together with hardly any of the guilt. Then, she adds a trio of fruit – tart dried cranberries, juicy grapes, and tangy green apples – along with red onions and crunchy almonds for a combination of textures that’s irresistible. Piled high on top of a sandwich, stuffed into a pita, or just mounded on top of a pile of greens, this chicken salad is anything but boring.
