Oven Baked Carrot and Sweet Potato Fries

Healthy fries you don't have to feel guilty about

Who doesn’t love sweet potato fries? With a sweet taste and crispy exterior, we convince ourselves that they’re healthier than fries made from regular potatoes. Well, this recipe does exactly that. Sweet potatoes are cut into matchsticks and roasted at a high temperature along with carrots to make them extra crispy. Use a variety of herbs for a flavorful punch or try a sprinkle of cumin, cayenne, and smoked paprika for a southwestern kick. Or, just season them with salt and pepper and call it a day. Any way you go, you don’t have to feel bad about more than a few…or 20.

My recipes are simple using high quality, fresh ingredients whenever possible. I’m not vegetarian, however, I try to cook healthy dishes with a focus on whole grains and vegetables.

Barb is a Brooklyn-based graphic designer and food blogger who, for the past year, has been sharing her healthy, seasonal recipes with the world at Wishful Chef. We love her rustic style that takes the best of what’s around and puts them together into easy, eclectic, and sophisticated-but-not-fussy food, like this cocktail. Most recently, along with her husband Max, Barb launched where they send recipe kits with everything you need to make a delicious recipe straight to your door. NoshOn.It approved, indeed.
