A fresh no fuss frittata

When you’re dreaming of an elegant spring lunch on the patio or a creative breakfast-for-dinner option, frittatas are a delicious, no-fuss way to put a simple meal on the table. They’re also one of our favorite ways to use up the bits and pieces of whatever leftover veggies we have in the fridge. In this beautiful green-hued version, Sylvie blends the eggs in the food processor with a quartet of fresh herbs (use whatever you have on hand) plus creamy ricotta that gives the frittata a smooth and rich consistency. Poured into a pre-heated cast iron skillet with bits of crumbled feta, the frittata bakes up fluffy and golden without any attention required. Serve this right out of the oven alongside a simple salad for a light dinner and save the leftovers for a delicious cold lunch the next day.
