Grilled cheese and tomato soup is a staple that reminds us of being kids. There’s something about a big bowl of warm soup with a crusty sandwich on the side to dunk in (always cut into triangles) that brings us back to a much simpler and more care-free time. Well, this recipe takes us there but gives the traditional combo a much-needed facelift by bringing together the classic caprese ingredients – tomato, basil, and mozzarella – in a unique way. Tomatoes are first slow-roasted to concentrate their flavor, then only partially pureed so the soup is creamy and smooth while still having body. The ingenious part of this recipe is using mozzarella instead of American in the grilled cheese and cutting the sandwich into little croutons which float on top of the soup. Stir in a heap of fresh basil at the end and you’ll have a warming meal that everyone in your family is sure to enjoy.
