Cajun Chicken with Shiitake, Braised Tomato and Onion

- Boneless Skinless Chicken Breast
- Butter
- Cayenne Pepper
- Dried Oregano
- Garlic Powder
- Onion Powder
- Salt
- Shiitake Mushroom
- Smoked Paprika
- Tomato
- Yellow Onion
It’s officially Mardi Gras! With today being Fat Tuesday, our inclination is to do as the name says and indulge into Cajun favorites like gumbo, jambalaya, red beans and rice, and a few Hurricanes. Given that it’s Healthy Tuesday, however, we’re choosing to keep things a little more nutritious without losing an ounce of flavor. This quick and easy recipe first sears Cajun-spiced chicken breasts in a hot pan until crusty, and delicious. Then, in the same pan, earthy shiitake mushrooms, sweet onions, and rich tomatoes are sautéed until they melt together, picking up the flavors of the chicken and turning into a luscious sauce. With a homemade spice rub, you get all of traditional spicy and smoky Cajun flavors without any of the guilt. Just for the record, however, we’re not giving up the Hurricanes.
