Smoked Paprika Chicken Cobb Salad

A diner classic with a healthy twist

Known for its bold flavors and recognizable ingredients (avocado, onion, tomato, egg, bacon, blue cheese), the cobb salad has been a restaurant staple since the ’30s. With a modern and healthy twist, this version cuts the bacon and blue cheese, but introduces so much extra flavor with smoked paprika on chicken, that the other things aren’t missed. Topped with a light, flavorful vinaigrette to compliment the other elements ingredients, this salad is far from ordinary. Next time you think, “I’ll just have a salad,” turn no further than this one – it’ll knock the boring right off your plate!

    I wish I had seen this tip last weekend! I was making hardboiled egg and watercress tea sandwiches, and could not neatly slice the eggs, so I changed it to egg salad. Also tasty, but not the intention! I love your tips in every newsletter, and this is a great one.
