First, a confession. We’re slightly obsessed with any kind of peanut noodle dish. There’s something about a good toothsome noodle paired with a creamy, spicy sauce (use crunchy peanut butter for a nice variation) and a ton of fresh veggies that is comforting and satisfying without feeling sinful. It’s perfect to make in large batches, eat warm on the first night then save the rest for a delicious, cold lunch that will make your co-workers jealous. Kelli’s version is particularly good because she uses soba noodles, a Japanese buckwheat noodle, that gives the dish a unique nuttiness. And, she makes sure you get your dose of protein by adding seared cubes of tofu that are pressed to keep them firm. The secret ingredient, however, is a touch of orange marmalade which gives the dressing a sweet and tangy flavor that rounds everything out. Oh, and did we mention you can make it in 30 minutes? Dinner = done.
