Spaghetti Squash Noodle Bowl with Lime Peanut Sauce

A big bowl of noodles...without the noodles!

After a long day of work, there’s nothing quite like a big bowl of pasta, right? Not necessarily! Laura’s spaghetti squash noodle bowl is all the comfort of a big bowl of Asian noodles, without the noodles. Spaghetti squash is a healthy, almost crunchy alternative to pasta, and when combined with Laura’s sweet and spicy peanut sauce, broccoli, and herbs, you won’t miss the real thing. She uses lime, rice vinegar and ginger for a tang, alongside peanut butter and agave for sweetness and creaminess. Not to mention she adds one of our favorite ingredients, Sriracha, to spice things up a bit. This naturally vegan, gluten free, and healthy alternative to noodles will fulfill that craving while getting you ready to be poolside as summer approaches.

My approach is one of careful attention and seasonality. I try to stay in tune with what my body is craving, and then follow up with something that is both delicious and nourishing. I think about how the food will satisfy me in a whole body/mind sense – aesthetically, nutritionally, ease/complexity of preparation etc.

The Canadian-born recipe developer, photographer and blogger behind The First Mess learned about cooking and “being in the world” in cooking school and in restaurants, but we’re so glad she decided to cook for us instead. Her dishes focus on physical and mental wellness, and she creates healthy, seasonal, flavorful meals that are often gluten-free, vegetarian, vegan. Nourishing food comes down to more than just healthy ingredients: Laura combines unique flavors with creativity and love to share foods that satisfy us from the inside out.
