Spiced Barramundi Fish Tacos with Spanish Rice and Chipotle Cream

Keeping up with creative recipes for a weekly taco night can be a challenge, especially when you want to make dishes that are healthy, fresh, and delicious. In this recipe, Lauren coats filets of barramundi, a sustainably-raised alternative to sea bass that you can find at Trader Joe’s, Whole Foods, and other stores, with a homemade spice blend. While the fish bakes in the oven, prepare the rest of your taco fixins: corn or flour tortillas, spanish rice, and a drizzle of chipotle cream, made from just sour cream (or greek yogurt) and the adobo sauce from a can of chipotle peppers. The barramundi is meaty enough to stand up to the spicy flavors of the rub and gets cooled off by the creamy sauce. Since the rice is wrapped right into the tacos, these are a filling and healthy meal that you can eat with no fork required.
